BRUSCHETTA
This recipe was one of the featured food items at the annual Paso Robles Olive Festival held in August 2006. The Festival is one of the largest olive festivals in California, attracting growers and producers as well as other businesses associated with olives and olive oil. Cooking contests are held for amateur and professional chefs to compete for prizes and recognition. Artist and Crafters present their wares for sale. Wine tasting is also a featured activity. Recipe for Bruschetta:
5 large plum tomatoes--finely chopped 1 cup loosely packed fresh basil--finely chopped 3 cloves of garlic--minced 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 1/4 cup Tuscali Extra Virgin Olive Oil juice of 1/2 lemon
Combine Tuscali Extra Virgin Olive Oil with salt and pepper, minced garlic and chopped basil. Pour this mixture over tomatoes, add lemon juice and mix. Serve on slices of lightly toasted pugliese bread.
